Salt & Straw will launch a new concept at its outpost in the Pine Street Market.
Owner Kim Malek didn’t reveal much in her interview with the Oregonian’s Michael Russell.
Here’s what we know for sure: The new shop will be Salt & Straw’s fourth in Portland, taking up a prime corner location at the upcoming market. By the time it opens, the company will have likely opened its second and third Los Angeles-area locations in Venice and downtown.
Mike Thelin, the Feast Portland co-founder who is curating the market’s food tenants, says the new Salt & Straw will be “unlike any other ice cream experience in Portland.”
“It’s going to be really special,” Kim Malek says, “and we’re hoping people really love it.”
