Northwest Portland’s Bull Run Distilling installed the state’s two largest 800 gallon stills to begin making whiskey.
Its four founders, including veteran Portland distiller Lee Medoff, want to define Oregon whiskey using the malted barley that’s become a hallmark of local craft brews.
“I want Oregon to be on the map with whiskey,” Medoff said. “It’s not Scotch. It’s not Irish. It’s Oregon whiskey.”
He’s watched the state’s craft distillery industry become one of the most vibrant in the country, first at McMenamins, then at his own brand, House Spirits. He also launched the Medoyeff Vodka line after his family name.
He left House Spirits last year to launch Bull Run and focus on dark spirits. It’s what distributors want, Medoff said, and it’s a less saturated market.
